INGREDIENTS:
- 1 Packet hakka noodles
 
- 200g each, assorted vegetables cut in long strips (julienne) ( I used carrots, beans, onions, cabbage and capsicum)
 
- 1/2 cup tomato sauce
 
- 3 tsp soy sauce
 
- 1/2 tsp ginger paste
 
- 2 tbsp oil
 
- 2 green chillies
 
- salt to taste
 
METHOD:
- Boil the noodles as per the instruction on the pack. Keep it aside and allow the water to drain.
 - Heat oil in a wok. Fry onions till they are cooked to a shade of pale pink.
 - Add ginger paste and chopped chillies, cook for a minute by stirring it.
 - Drop in carrot and beans. When they are half cooked add capsicum and cabbage. Cook for 2-3 minutes by stirring it occasionally.
 - Add tomato, soy sauce and salt to it.
 - When its almost cooked, add boiled noodles and mix it well.
 
VARIATIONS:
You could also try other vegetables like green peas, leafy vegetables, chives or spring onion, paneer, chicken chunks anything that appeals to your taste buds.
